My name is Mika Matsui

I’m a Kyoto-born chef now based in Los Angeles, where I bring together traditional Japanese technique, seasonal ingredients, and global influences shaped by my journey. After years of training in Kyoto and working in diverse kitchens across LA, I’ve developed a thoughtful, ingredient-driven approach to my cooking. Today, I focus on creating intimate, memorable dining experiences that reflect both my roots and my evolution as a chef.

Temari Sushi

Kyoto Fine Craft

Temari sushi, or temarizushi, is a ball-shaped style of sushi that originated in Kyoto. It was created for Kyoto’s geiko and maiko, allowing them to enjoy a single, graceful bite without disturbing their makeup. The design is inspired by traditional, brightly colored hand-stitched balls, reflected in its delicate and vibrant appearance.

Izakaya

An Izakaya (居酒屋) is a casual Japanese dining and drinking spot, often likened to a cross between a pub and a tapas bar, where people gather to relax, share small plates, and unwind after work.

Japanese Sando Brunch

Brunch

A sando is a Japanese-style sandwich, with the name derived from “sandoitchi.” It’s usually made with soft, crustless milk bread known as shokupan, and filled with either savory options like crispy pork cutlet (katsu) or egg salad (tamago), or sweeter fillings such as fresh fruit paired with whipped cream.
